I’ve been making more desserts with fruit these days. Here is a nectarine tart which is made up of a tart dough with almond filling, topped with fresh nectarines.

It’s hard to imagine that in the past, I did not like fruit desserts at all. I loved (and still love) fresh fruit, but was a little wary with the concept of cooked fruit. Now, I’m much more open and find that fruit can be delicious used in different ways.

The tart dough is simply butter, flour, a bit of sugar, salt and egg to bind.

I roll the dough out into a rectangle which I pre-bake.

Then, I roll out scraps of dough and line the border. The filling is made from butter, sugar, almond flour, and eggs. I think I made a little too little filling. Or, the size of my tart was too large for the amount of filling I had. I also should have spread the filling over the borders as well, so it creates more of a glue to hold everything together.

After spreading the almond filling, I slice nectarines and arrange them over the top. I sprinkled sugar on top and baked until the crust was nicely browned and the fruit cooked through.

The apricots were firm and still held their shape but were almost tender in the middle although still slightly crisp.

Then, I melted some apricot jam and brushed it atop the fruit.

The crust came out very flaky and crisp which I enjoyed. The fruit was also sweet and paired nicely with the almond filling. Next time, I would almost double the amount of almond filling to create more moisture and more of a binder to keep the nectarines attached to the tart.
